Vegetable Egg Omlette | Healthy omelette for kids




Is your kids fussy eating vegetable but more fond of eggs?? Here is a simple technique where you can make an omelet using finely chopped vegetables and feed your kids a healthy vegetable platter along with protein and fat. I usually prepare whenever I prepare veggie dosa varieties.


Ingredients :

Egg - 2
Finely chopped vegetables (carrot,beans, cabbage) - 1 cup
Onions - 1
Pepper powder - 1/2 tsp
Salt - 1/4 tsp


Method :

1. Finely chop the vegetables as shown in picture.
2. Heat oil in a pan, fry the onions first followed by adding all veggies.
3. Fry about 2-3 minutes and add the red chilli powder, Turmeric powder, coriander powder, Jeera powder and salt
4. Cover and cook in medium flame until soft. Put off the flame.
5. On the other side break an egg and spread as an omelet on a hot tawa.
6. Add a scoop of cooked veggies on top of it and spread evenly
7. Sprinkle pepper and salt. Flip the other side and let it cook in low flame
8. Transfer to a plate and serve.







Note :
  • Adding vegetables varies according your preferences. But these three veggies takes even time to get cooked.
  • You can also beat the egg and mix these veggies for making an omelet.
  • I prefer this method mainly to avoid the smell of egg in the vessel while beating the egg :-)
  • Cook in low flame

Palak Egg burji | Keerai muttai poriyal


Palak Muttai Poriyal


Usually I will make keerai/Spinach egg fry using drumstick leaves. Because am not getting drumstick leaves in the place where am staying, I totally missed out the recipe in my regular menu. But my sister in law once prepared this egg poriyal using palak and the combination was perfect. Here is the stepwise recipe to go with.




Ingredients:

Palak - 1 small bunch
Eggs - 3
Mustard - 1/2 tsp
Channa dal - 1/2 tsp
Shallots - 4
Dry red chilli - 2
Salt - 1 tsp
Turmeric powder - 1/4 tsp


Method:

 1. Set ready with your ingredients. Wash and chop the palak, onions.
 2. Heat oil in pan add mustard and channa dal.
 3.Add onions, dry chilli and saute for about a minute.




 4. Add the palak, turmeric powder and salt.
 5. Fry well until the palak is cooked completely.
 6. Break in two eggs.
 7. Cook in medium flame and keep mixing evenly.
8. Fry well until the egg and palak mix together like burji.




9. Transfer to a serving bowl.

Note:
  • I showed two eggs added in the picture. Adding additional eggs is of your choice.
  •  I have added one more after clicking my pictures,beacuse of sudden change in head count :)
  • Sprinkle salt, cover and cook the spinach.
  • You can also use finely chopped big onions.

Egg fry | Fried eggs | Simple egg recipe



Saute Eggs



I always prefer making omelet using eggs than in boiled form. The main reason is of its smell. But whenever it comes as a non veg party or have a friends get together prepared omelets become hard and so choice would be boiled eggs. This recipe of simply frying or sauteing the eggs with just turmeric powder and cumin seeds removes odor and gives a colorful appearance when served on plate. Also kids love to eat when they find something different..:)


Ingredients:

Eggs - 2
Jeera/cumin seeds -1/4 tsp
Turmeric powder -Less than 1/4 tsp
Salt - just to sprinkle
Oil -1 tsp


 
Method:

 1. Boil the eggs and make slit around the sides as shown.
 2. Heat oil in a pan, add cumin seeds, turmeric powder, eggs and saute well in low flame. Keep tossing until all the sides are roasted evenly.
 3. When fried completely, sprinkle some salt and transfer to a plate.

My Note:
  • You can also add some salt when boiling the egg too. 
  • I do not add to avoid too much salt consumption.
  • You can also deep fry the eggs by adding just turmeric powder in oil.

Masala eggs | Easy egg repies



Eggs are all time available ingredients and is a good immediate replacement for Non-vegetarians whenever they tempt to taste the Non-veg foods. Posted here is a very simple recipe of a spicy , Tangy and masala flavored aromatic sauted  eggs. The only thing you require is preapare and store about a medium size Curry masal powder (It is different from garam masal powder) and sprinkle whenever you wanted  a flavored eggs,potatoes and other vegetables too.....




 Ingredients:

Boiled Eggs - 4 to 5
Curry masal powder - 2 tbsp (Click the link to know how to prepare else refer Step 1)
Tomato sauce -1 tbsp
Onions -1 big size
Salt as required
Oil -2 tbsp



Method:
 

 1.  Cut the onions into thin medium sized slices. For curry masal powder dry roast channa dal, urad dal, Cinnamon, cloves, coriander seeds, pepper, dry red chillies, curry leaves, saunf and grind to a fine powder. 


 2. Heat oil in a pan and fry the onions until slight brown.
 3. Meanwhile make length wise slits on the boiled eggs (as shown in the picture)
 4. When the onion is fried add curry masal powder, salt and saute for while. then add the slitted eggs and mix well.
 5. Now add the tomato sauce and mix well until the aroma spreads evenly on the eggs.
6. Transfer to a serving plate and enjoy the yummy aromatic side dish.

Note:


  • Curry masal powder is different from garam masala powder so try to prepare this homemade powder and take up the health benefits.
  • If you do not have time to prepare the powder, replace with garam masala powder but the flavor of pepper and chillies would absolutely be missing.
  • This recipe would be an easy, simple and spicy side dish for bachelors to prepare. Tastes yummy with rasam sadham (Rice) /Variety rices.

Egg kurma | Egg side dishes

Egg kurma

In this method of preparing Egg kurma, fry,grind,saute,cook and finally break in the eggs and mixed well with kurma. This would be a great side dish for Roti/Chappathi.






 
Ingredients :

Egg -4
Grated Coconut -1 cup
Turmeric powder -1/4 tsp
Tamarind water -2 tbsp
Tomato -1
Saunf/fennel seeds -1/2 tsp
Curry leaves -few
Green chilli -2

To fry and grind
Oil
Onion -2
Dry red chilli -3
Tomato -1
Channa dal -1 tsp
Cinnamon - 1 inch
Cloves -2

Method :


  1. Heat oil in a pan, fry cinnamon,cloves,onion,channa dal,tomato and cook until mushy.
  2. To the above fried items add coconut,saunf and grind to a fine paste.
  3. Heat oil in separate pan,add mustard,onion,green chilled,curry leaves and saute for about a minute.
  4. Now add in chopped tomatoes and fry well. Add the grinded paste and fry well.
  5. Add 3 glass of water,turmeric powder,salt,tamarind water and allow it to boil well.
  6. When it reaches the gravy form break the eggs into the gravy and mix well evenly.
  7. Finally garnish with chopped coriander leaves.



Note :
  • This egg kurma would serve a better side dish for roti/Chappathi.
  • Adding tamarind water is tried out with the idea of my friend. It tastes good but I like the curry without tamarind juice.

Egg burji | Chilli sauted egg burji

Eggs are the readily available ingredient to satisfy the taste for non-vegetarians. Eggs fall between the category of vegetarians and non-veggies. Simple recipe made of eggs is the burji always.Usually egg burji is prepared just with salt or pepper. Here is a different spice touch with chilli powder. Try sometime this recipe as a side dish with rasam or any curries of your choice.



Ingredients :

Eggs -4
Pepper -2 tsp
Red chilli powder -1 tsp
Salt as required
Oil-1 tbsp

Method :
  1. Crack the eggs one by one in a bowl and beat nicely to get mixed.
  2. Heat oil in a pan, add the beaten eggs and stir continuously to get small granule forms.
  3. when they are half cooked, add the pepper powder and chilli powder and salt and keep mixing until you get the spice mixed evenly with the egg burji.
  4. Serve this along with rice,rasam or serve as plain burji.

Egg pepper fry | pepper fried eggs


As per article in Times of India,When you say eggs, they are super healthy food and can be prepared in many interesting ways. They are storehouse of vital nutrients and takes an integral part on healthy diet. Eggs are well known to be rich source of protein.Another important nutrient found abundant in egg white is Riboflavin (this is vitamin B2, a water sdoluble vitamin,which is required for normal cell function, growth and energy production ). Here is there recipe of boiled eggs fried with touch of pepper and jeera.




Ingredients:

Eggs -4
Jeera -1/2 tsp
Turmeric powder -1/4 tsp
Pepper powder -1 tsp
Salt -1/4 tsp
Curry leaves -few
Oil -1 tbsp
Coriander leaves to garnish


Method:

  1. Boil the eggs and cut in square shape.
  2. Heat oil in a pan, add curry leaves and let it splutter.
  3. Add turmeric powder and then cut egg pieces, pepper powder and salt and cook in low flame.
  4. Saute well untill the heat spreads over the eggs.
  5. Garnish finally with chopped coriander leaves.



    Note:
    • Cut in cube shapes to get an even spread of masala.
    • Do not stir continuously and take care that the white part has to get roasted in the pepper and turmeric powder
