Chicken Gravy for Rotis| Chicken curry without coconut



Chicken Curry

This is a not a long step process gravy but an awesome gravy which goes well with Roti/Chapathi and also a better combo with Rice. The gravy tastes perfect whem cooked in low flame where the spice powders and masalas gets incorporated with the chicken pieces and gravy. The gravy would be a simple reicpe for bachelors to enjoy their weekend spice up homecooked foods and here we go with the recipe :-)



Ingredients :

Chicken - 1/2 kg
Clove Cinnamon powder - 1/4 tsp  
Cardamom - 1
Bay leaf - 1 
Finely chopped onion- 1 cup (2 Nos)
Ginger garlic paste - 1 tbsp
Tomato - 1 big
Turmeric powder - 1/2 tsp
Red chilli powder - 1.5 tsp
Garam masala powder - 1 tsp
Chicken masala powder - 2 tsp
Water - 1.5 cup
Salt - 1.5 tbsp
Cashew (9)+curd (2 tsp) - Soaked and ground as paste
Mint& coriander leaves - a handful
Oil - 1 tbsp



Method of Preparation :


 1. Make powder of Clove and Cinnamon and use 1/4 tsp of it.

 2. Heat oil in a pan add Clove cinnamon powder, bay leaf and cardamom
 3. Add chopped onions
 4. When onions turn pink add ginger garlic paste
 5. Saute for half a minute
 6. Add chopped tomatoes
 7. Add Turmeric powder, redd chilli powder and salt
 8. Fry until raw smell goes off
 9. Add cashew curd paste
 10. Stir well for 2 minutes
 11. Add chicken, a handful of coriander leaves, mint leaves,garam masala powder
 12. Mix well, cover and cook
 13. Add 3/4 cup of hot water.
 14. After 5 minutes add chicken masala powder
 14. Add another half cup water, keep covered and let the chicken cook







 15. Put off the flame once the pieces are tender and oil separates.









Note :
  • Adjust water according to your requirement of consistency of gravy/curry
  • If you are cooking in low flame 1.5 is the maximum water to be consumed.
  • Add hot water if you want to add in between to keep the chicken soft and tender, else they tend to become hard.
  • Cook each masala well until the raw smell goes off
  • Bachelors when they feel grinding is a tedious process just add 2 tbsp of curd and add the soaked cashews into the gravy.

Tandoori Chicken Fry | Onion fried chicken | Tawa fried chicked




 This recipe is so simple and an awaiting recipe I wanted to try after years... During my college days I had couple of friends from Kerala,where I spend my time with them to learn Malayalam. Once I went to their room as usual and to my luck I got this simple recipe. They were not having any spice powders in hand other than salt and chilli powder.With the request of a friend they started marinating, slicing onion and frying a long time this recipe and it doesn't spoil up expectation. Its a perfect simple fried chicken on tawa. This recipe can be categorized as Tandoori.



Ingredients : 

Chicken - 250 gms
Red chilli powder - 1 tsp
Salt - 1/2 tsp
Oil - 1 tsp


 Method :


 1. Clean, wash and drain out the water completely. Add red chilli powder and salt.
 2. Allow it to marinate for 1 hour.
 3. Cut the onions into thin slices.
4. Heat oil in a pan, add the sliced onions and fry well.
 5. Cover with a lid and fry in medium flame.
6. Fry until golden brown. It takes about 15-20 minutes for the onion to get fry.
 7. Add in marinated chicken.
 8. Mix well, cover with lid and place the fried onions over the pieces and allow it to cook.
 9. After about 20 minutes the chicken and onions gets blended together and will be fried as shown in the picture.



 10. Transfer to a serving plate and enjoy the platter with onion and lemon.

Note : 
  • Cover with lid and fry both the chicken and onion.
  • Give a fine stir in between and let it cook in medium flame. Its a perfect and simple starter on kadai.
  • Serving with onion and lemon would be a better choice. Its quite a simple recipes for bachelors.

Cardamom Chicken



Cardamom Chicken

After a break of 1 week I felt to share something which I really worth a new try of chicken recipe. Usually in South we don't add more of cardamom in making traditional chicken recipes. So this I can say purely of North Indian touch.This reminds one of my Bengali friend who carries chicken with cardamom flavor. I tried out for the first time when my loving sis..as she likes to taste something new. It really turned out perfect and awesome. So this week I prepared the same when my Uncle came. Though my hubby prefers curry always in non veg, appreciated its perfect and from there I confirmed its really worth doing this simple gravy...(only u have to chop more onions:)





A very simple recipe for bachelors to cook....only required of chopping onions in fine pieces :-)

Ingredients :

Chicken - 1/2 kg
Onion - 4 big size (finely chopped)
Red chilli powder -3 tsp
Curry masal powder - 2 tsp
Cinnamon & Clove powder - 1 tsp
Crushed Cardamom - 7  Nos
Cashew paste - 1 tbsp
Gingelly oil - 3 tbsp
Salt as required





Method:


  1. Clean and wash the chicken and drain out the water completely.
  2. Heat 1 tbsp of oil and roast the chicken brown or  until they get half cooked.
  3. Meanwhile heat the remaining oil in another kadai/tawa and fry onions until golden brown.
  4. Add all the masala powder, salt and saute for about 5 minutes in low flame.
  5. Add this ingredients into the roasted chicken and mix well.
  6. Pour sufficient water about 1 cup, cover with a lid and cook in medium flame.
  7. When it reaches the gravy consistency, add the cashew past, give a quick stir and keep covered for 5 minutes in simmer.
  8. Transfer to a serving bowl and serve hot with Rice /Roti/Phulka of your choice.






Note:
  • Clean the chicken properly to remove any blood clots.
  • If you do not have curry masal powder, replace with garam masala. I use home made curry masal powder in health concern.
  • Use boneless chicken if you wish for preparing this gravy, but I used with bones.
  • Get the chicken pieces in medium size or small pieces of your choice.
  •  1 tbsp of cashew paste can be made from 7-8 cashews.

Yoghurt marinated Chicken Fry | Bengali style of Chicken curry


Yoghurt marinated Chicken curry

Marinating of chicken and preparing curry is a North Indian style of preparing side dishes. This recipe of marinating chicken using curd is usually prepared by Bengalis.



Ingredients:

Chicken - 1/4 kg
Yoghurt - 2 tsp
Milk -1 tsp
Turmeric powder -1/4 tsp
Red chilli powder - 1 tsp
Garam masala - 2 tsp
Cinnamon & Clove powder - 1/2 tsp
Chopped coriander leaves -3 tbsp
Tomato -2
Salt as required
Oil - 1 tbsp

To grind as paste:
Ginger - 1 inch size
Jeera - 1/2 tsp
Coriander leaves - 1/2 cup



Method:


 1. Add all ingredients (except tomato, coriander leaves, oil) and Beat them up to a fine paste.



 2. Marinate the chicken for about 6 hours with the mixed paste.
 3. Heat oil in a pan/kadai and add the marinated chicken, Add required water about 1/2 cup,close the lid and cook in medium flame.


4. Grind the tomato to a fine paste and add the puree and cook.
5. When the chicken becomes soft and tender add the coriander leaves and put of the flame.

Masala eggs | Easy egg repies



Eggs are all time available ingredients and is a good immediate replacement for Non-vegetarians whenever they tempt to taste the Non-veg foods. Posted here is a very simple recipe of a spicy , Tangy and masala flavored aromatic sauted  eggs. The only thing you require is preapare and store about a medium size Curry masal powder (It is different from garam masal powder) and sprinkle whenever you wanted  a flavored eggs,potatoes and other vegetables too.....




 Ingredients:

Boiled Eggs - 4 to 5
Curry masal powder - 2 tbsp (Click the link to know how to prepare else refer Step 1)
Tomato sauce -1 tbsp
Onions -1 big size
Salt as required
Oil -2 tbsp



Method:
 

 1.  Cut the onions into thin medium sized slices. For curry masal powder dry roast channa dal, urad dal, Cinnamon, cloves, coriander seeds, pepper, dry red chillies, curry leaves, saunf and grind to a fine powder. 


 2. Heat oil in a pan and fry the onions until slight brown.
 3. Meanwhile make length wise slits on the boiled eggs (as shown in the picture)
 4. When the onion is fried add curry masal powder, salt and saute for while. then add the slitted eggs and mix well.
 5. Now add the tomato sauce and mix well until the aroma spreads evenly on the eggs.
6. Transfer to a serving plate and enjoy the yummy aromatic side dish.

Note:


  • Curry masal powder is different from garam masala powder so try to prepare this homemade powder and take up the health benefits.
  • If you do not have time to prepare the powder, replace with garam masala powder but the flavor of pepper and chillies would absolutely be missing.
  • This recipe would be an easy, simple and spicy side dish for bachelors to prepare. Tastes yummy with rasam sadham (Rice) /Variety rices.
