Chicken Popcorn


Crispy Chicken Popcorn


Chicken Popcorn is one of the recipe where the chicken lovers would never have missed the opportunity to taste these crispy bites. AM a very big fan of KFC but after my kid I generally don't prefer eating outside that too mainly non-veg foods. I feel its better to serve the home made foods rather than the carry outs. So here is my try out for chicken popcorn which turned out really good.



Ingredients:

Chicken fillets - 250 gms
Egg - 1
Milk -1/4 cup
Bread crumbs - 1 cup
Maida/All purpose flour - 1/2 cup
Onion Powder - 2 tbsp
Garlic powder - 1.5 tbsp
Red chilli powder - 2 tsp
Baking soda - 1 pinch
Black pepper powder - 1 tsp
Sugar - 1/2 tsp
Salt - 1 tsp
Oil for deep frying



Method :


 1. Clean the chicken fillets, wash and drain out water completely.
2. Cut them into fine cubes.




3. In a bowl mix Red chilli powder,pepper powder, salt, sugar,onion & garlic powder, baking soda and mix well evenly


4.In a separate bowl add milk and egg. whisk well.
5. Set in all your ingredients ready.





 6. First roll the chicken pieces in flour mix.
7. Next dip in egg mix.





 8. Finally roll in the bread crumbs.
9. Repeat the process by rolling the chicken pieces i flour mixture, egg mixture and breadcrumbs and set ready



 10. Heat oil a pan and add the chicken balls in batches.
 11. Do not add too much of balls at a time. Keep the flame in medium and fry the chicken pieces until golden brown.
 12. Drain out the fried balls in a separate pan.
13. Place it on a tissue paper and serve with any dipping of your choice.








Note:
  • You can use white pepper powder instead black pepper.
  • If you find paprika powder use instead of red chilli powder. This gives the chicken balls a vibrant color.
  • I love with mayonnaise, you can even taste with tomato ketchup's. 
  • If the chicken pieces are harder, soak them in buttermilk for about 4-5 hours to get it softer. 
  • You can also sprinkle little salt in the bread crumbs if you wish. I just added a pinch after one batch of frying the popcorn.

Chicken Tandoori | Tandoori on Tawa | Leg Tandoori | Simple Tandoori recipe






Ingredients:

Chicken legs - 8-9
Tandoori Masala - 4 tsp
Fresh curd - 5 tbsp
Lemon - 1/2
Red chilly powder -1 tsp (optional)
Garlic -2 full
Ginger - 1 finger size
Corn flour -1 tsp (optional)
Salt as required
Butter to roast




Method:


 1. Clean the leg pieces and make two slanting slits on sides (as shown)
 2. Marinate with lemon juice and salt for about 15 - 20 minutes.
3. Make a paste of ginger garlic with tandoori masala and add in the curd, corn flour and mix well.
 4. Marinate the leg pieces with the masala and leave for 2 hours, else refrigerate for 1 hour.
5. Heat the tawa and add a tsp of butter and roast well the pieces in low flame. Keep flipping the other sides to get cooked evenly.
 6. It takes about 20 minutes for a single piece to get fried.

 7. Serve with onion rings or any salad of your choice.

Note:
  •  You can either use Flat bottom thick kadai/pan or else use the curved iron tawa. I tried on both and it came out similar.
  • Because it takes about 20 minutes for a single piece to cook I tried out to fry using both burners.
  • Felt that either of this wont give out perfect, but both pieces gave a similar touch of cooking.

  •  Adding Red chili powder is purely optional as I needed for bit spicier taste. 
  • Rub well the paste all over and deep inside the slits  and then leave for marination.
  • I do not have a grill pan so felt to try out on tawa or kadai....which turned out really awesome with the tangy lemon taste from the roasted slits.
  • "Keep covered" to avoid oil bursts and sprays on you.
  • Remove the burnt masalas leaving in oil if any.

Masala eggs | Easy egg repies



Eggs are all time available ingredients and is a good immediate replacement for Non-vegetarians whenever they tempt to taste the Non-veg foods. Posted here is a very simple recipe of a spicy , Tangy and masala flavored aromatic sauted  eggs. The only thing you require is preapare and store about a medium size Curry masal powder (It is different from garam masal powder) and sprinkle whenever you wanted  a flavored eggs,potatoes and other vegetables too.....




 Ingredients:

Boiled Eggs - 4 to 5
Curry masal powder - 2 tbsp (Click the link to know how to prepare else refer Step 1)
Tomato sauce -1 tbsp
Onions -1 big size
Salt as required
Oil -2 tbsp



Method:
 

 1.  Cut the onions into thin medium sized slices. For curry masal powder dry roast channa dal, urad dal, Cinnamon, cloves, coriander seeds, pepper, dry red chillies, curry leaves, saunf and grind to a fine powder. 


 2. Heat oil in a pan and fry the onions until slight brown.
 3. Meanwhile make length wise slits on the boiled eggs (as shown in the picture)
 4. When the onion is fried add curry masal powder, salt and saute for while. then add the slitted eggs and mix well.
 5. Now add the tomato sauce and mix well until the aroma spreads evenly on the eggs.
6. Transfer to a serving plate and enjoy the yummy aromatic side dish.

Note:


  • Curry masal powder is different from garam masala powder so try to prepare this homemade powder and take up the health benefits.
  • If you do not have time to prepare the powder, replace with garam masala powder but the flavor of pepper and chillies would absolutely be missing.
  • This recipe would be an easy, simple and spicy side dish for bachelors to prepare. Tastes yummy with rasam sadham (Rice) /Variety rices.

Fish fry (method 1) | Easy fish fry recipes

 When compared to all types non-veg foods, fish seems to have the most nutritious and health benefits. Consuming fish at least twice a week is found to reduce the risk of certain diseases from childhood asthma to prostate cancer. Fishes are the richest source of omega -3 fatty acid,the most predominant compound required for brain development. They are also found to reduce the risk of heart diseases.


Ingredients:

Fish - 10 pieces
Corn flour -3 tsp
Rice flour -2 tsp
Kashmiri chilli powder -4 tsp
Ginger garlic paste 1 tsp
Lemon juice -1 tsp
Curd -2 tbsp
Salt -1 and half tsp
Soy sauce -1/2 tsp
Oil to fry

Variety of fish used:


Here I used Butter fish (paarai meen). In this method I also fry Black pomfret (vavaal), Seer fish (vanjaram) not tried in any other varieties. But you can choose the fish variety of your taste and method is same,but take care that fish to be cut in thin cylindrical slices...which would make frying easy and even.


Method:


  1. Clean the fish : First wash the fish about 5 to 6 times in water. Add the turmeric powder, salt and mix or rub well and leave aside for about 10 minutes and then just wash only for about 2 times.
  2. Add all the above given ingredients (except oil) to a blender and give 3 to 4 pulse. Its just to mix all the ingredients.
  3. Marinate the fish with this paste on both sides and leave it aside for about 2 hours.
  4. Heat a flat pan/flat skillet and add required oil to fry. The oil should cover till half of the fish.
  5. Leave for about 2 minutes in medium flame till one side gets cooked, then turn the other side to fry.

Note/tips :
  • Grinding in blender is just to get masalas get mixed evenly,instead using spoon or hand.
  • Instead of ginger- garlic paste you can also use whole ginger and garlic pods,if you are grinding the masalas.
  • To avoid masalas coming out while frying....... Take care not to apply more masalas over the fish,just apply a coating.
  • while frying wait for at least a minute to turn the fish for frying. Because continuous turning will make the masalas dropping out.
  • When making the marinated fish to dry, take care to turn other side after an hour. You can do the same process keeping in freezer instead of room outside.
  • Do not use food color at any cost to give the eye catching colors as they are not safe to get digested and absorbed.

Sardines pepper fry | how to fry Matthi or Chaala meen

Sardines are called as Matthi in tamil and chaala meen in malayalam.As an usual concept, fishes are generally rich source of Omega -3 fatty acid. In that specifically sardines are one among the most richest source.Sardines particularly have a strong smell when compared to other varieties.They contain the healthy unsaturated fat which lowers the cholesterol and reduce risk of heart diseases. This recipe I learnt from one of my colleague from Kerala. Its very simple to prepare and of course, fish lovers enjoy the most. But some doesn't like this fish because of its strong flavor.



Ingredients:

Sardines (small variety) - 6
Pepper powder -3 tsp
Salt -1 tsp
Oil to fry


Method :


  1. Wash and clean the fish without any clots or black wastes.
  2. Make a cut in the both sides of the fish (3 cuts maximum) 
  3. To this add pepper powder, salt and mix well.
  4. After 10 minute's heat oil in kadai/iron tawa and fry these sardines in medium flame.
  5. Serve crispy and this fried sardibes can be kept even for the next day.

Note:






  • Washing of sardines require more concentration in cleaning. So take care to clean well.
  • Do not make more slits/cuts as the fish may get burnt while frying.





  • Also do not fry without making cut as the fish becomes soggy
