Mutton pepper fry | Mutton milagu varuval (Simple method)


Simple Mutton pepper Fry


This method of preparing pepper fry is very simple with just onions and pepper powder. This recipe is regular method of preparing traditional mutton varuval(Mutton fry) but the difference is just replace all the spices with pepper powder which would be totally a simple and different taste from the regular fry we make.



Ingredients:

Cooked Mutton - 1 bowl (Refer Step 1,2 & 3)
Onion- 2
Garlic- 1 full
Green chilli -2-3
Pepper corns - 2 tsp
Curry leaves - few
Oil - 3 tbsp
Salt as required



Method:


 1. Heat 1 tsp of oil, add clove cinnamon powder.
2. (Choice 1)Add cleaned mutton and pressure cook adding salt, 3 tsp of mutton masala, 1 tsp of turmeric powder.



 3. (Choice 2) Else you can drain out the pieces from the traditional curry you make for preparing this pepper fry. (I always follow this method)




 4. Slice the garlic, onion,slit the green chilli




 5. Dry roast pepper corns and grind to coarse powder.
 6. Heat oil, add mustard seeds and curry leaves
7. Add sliced onion, chilli and garlic. Fry until golden brown.
8. Add the cooked mutton pieces and add just 1 tsp of mutton masala if you require.
9. When the mutton gets cooked evenly with onion and the flavor of chilli add the pepper powder along with the salt.
10. Fry for about a minute or two and put off the flame.
11. Simple mutton pepper fry is ready to serve







Note:
  • We always prepare a kuzhambu/Curry along with a varuval/dry gravy using the pieces.
  • So I always drain out the pieces from the curry.
  •  Adding mutton masala is just get a coating of masala in the fry. I generally add for other type of varuval,but here I haven't added because of adding pepper powder.
  • Initially frying of Mutton with clove-cinnamon powder gives the mutton a better flavor once cooked without any much spices.

Mutton Soup | Mutton Spicy Soup


Mutton Soup

Previously I have posted the recipe of preparing mutton soup for Infants which can be altered in taste even for  adults too. This recipe of preparing Mutton soup is by grinding the spices which gives additional flavor and taste to the soup. Just picking out few pieces before making any mutton curry or gravy will be more than enough for this healthy soup.



Ingredients:

Mutton bone pieces - 5-6
Shallots/ Pearl onions - 6
Curry leaves - 1 full stick
Turmeric powder - 1/4 tsp
Salt - 1 tsp
Coriander leaves to garnish

To grind:
Peppercorns - 1 tsp
Jeera/ Cumin seeds - 1 tsp
Garlic - 3 



Method:

 

 1. Transfer the contents to grind to a mixer jar.
2. Add about 1/4 glass of water and grind to coarse form.
 3. Add all the ingredients together in pressure cooker. (except coriander leaves)
4. Mix well.





 5. Close the lid and cook for 5 to 6 whistles.
 6. Once pressure is down add chopped coriander leaves.
 7. Filter out the liquid soup slowly in separate vessel.
8. Transfer in glasses or cups and enjoy the spicy Mutton soup.

Note:
  • You can also add one full tomato without chopping when pressure cooked.
  • Do not chop shallots or separate the curry leaves. It becomes difficult when filtering the soup in bowl.
  • Sprinkle some salt and pepper while drinking which adds little spice to the soup.
  • You can also mix this soup with Rice and feed for kids.
  • In the same way you can prepare aatukaal soup also but the traditional recipe of aatukaal soup is different and will post at the earliest.

Chettinad Mutton curry | Chettinad Mutton gravy


Chettinad Mutton Gravy


Getting bored always with traditional style of mutton curry in the weekends :( So, I wanted to change out my recipe in the form of gravy. From long back I had a thought of preparing mutton curry in chettinad style. This weekend was my right time to prepare, because my hubby doesn't prefer any other method of preparing non-veg recipes as they contains more of masalas and spices :( That is the reason I always make mutton curry in traditional method. Here is the step wise picture to go with :) :)



Ingredients:

Mutton - 500gm
Whole spices - 1 or 2 each (clove,cinnamon,bay leaf)
Onion - 2
Tomato - 2
Turmeric powder -1/2 tsp
Ginger garlic paste - 1 tbsp
Chettinad masala powder - 5 tbsp
Oil -3 tbsp
Crystal salt - 4 to 5 tsp 


To grind as paste:
Coconut - 1 cup
Fennel seeds - 1 tsp
Khus-Khus - 1/2 tsp 


 
Method:


1. Set aside all the required ingredients.

2. Prepare Chettinad masala powder and keep aside.



 3. Heat oil in a pressure pan and add the whole spices.
4. Add the sliced onion, slit chilli, curry leaves and fry well.



 5. Add the chopped tomatoes and salt.
 6. Now add turmeric powder and fry until mushy.
7. At this stage add ginger garlic paste. Fry for just a minute.
 8. Now ad din the chettinad masala powder and cleaned mutton pieces.
 9. Give a quick stir as the masala powder tend to burn easily.
10. Add about 3 cups (~1/2 liter) and required salt.



11. Pressure cook for about 5 to 6 whistles.

12. Meanwhile make a fine paste of ingredients given under to grind.


 13. Release the pressure and you can find oil had come out.
 14. Now add in the grind ed paste and cook well.



15. When all masala get blended with each other put off flame and garnish coriander leaves.

16. Transfer to a serving bowl and serve with ring onions.

Note:
  • You can increase or decrease adding of spices according to your taste preference.
  • The masala powder can either be prepared fresh or can be prepared and stored already.
  • You can also extract coconut milk and add to the gravy.
  •  Reduce the water content for cooking if you wish to add coconut milk.
  • Also do not cook for long time after adding coconut milk. Just put off the flame in 3 to 4 minutes.
  • Take care to cook in medium flame if adding coconut milk.

Mutton kuzhambu without coconut | Traditional mutton curry


Mutton Curry


This is my usual style of preparing mutton kuzhambu,where I grabbed the recipe from my mom and from her mom the recipe came through... So no doubt I can say this recipe a traditional style of cooking mutton in a very simple way. This is how most of us in our family prepare mutton curry.



Ingredients:

Mutton - 1/2 kg
Shallots - 2 cups
Dry red Chilli - 7-8
Curry leaves - few
Pepper - 1 tsp
Jeera/cumin seeds - 2 tsp
Rice -1 tsp
Dhania/coriander seeds - 5-6 tsp
Ginger - 1 inch size
Garlic - 3 pods
Turmeric powder - 1/2 tsp
Oil - 2 tbsp

To Temper/Seasoning:
Oil - 1 tsp
Pepper - 1/4 tsp
Dry red chilli -2
Curry leaves - few


Mutton Kuzhambu



Method:

  1. Dry roast Rice,pepper and jeera.
  2. Heat Oil and fry red chilli,dhania till the aroma comes out and keep aside. 
  3. Then fry shallots and curry leaves till they are golden brown.
  4. Now add turmeric powder,ginger,garlic and saute for a while.
  5. Mix now all the fried ingredients,allow it to cool and grind to a fine paste.
  6. Heat 1 tbsp of oil in a pressure pan,add cleaned mutton pieces and saute for about 5 minutes in low flame.
  7. Now add grinded paste, 3 to 4 cups of water and cook for 4 whistles with salt.
  8. Once the pressure is down, check whether mutton cooked soft. If not close the lid and leave for another 3-4 whistles.
  9. Transfer to serving bowl and add tempering of pepper and curry leaves.

Note :
  • Rice is added to give a thick texture to the kuzhambu/gravy.
  • When buying mutton take with little amount of fat,so that it adds taste to the curry.
  • You can increase the number of chillies according to your spice preference.
  • Do not add more water as the curry becomes watery. Add water according to the consistency you require to eat with rice or Idli.
  • Do not add coriander leaves as they might change the flavor.
  • This curry would serve as better side dish for Idli during breakfast.

Mutton soup | Mutton clear soup for Infants



As per the advice of my pediatrician, I started introducing chicken,mutton and fish to my son in his 9th month onwards. The baby care differs with each pediatrician, so consult with your pediatrician once before you can introduce any new heavy food stuffs. If  they are advisable to introduce here is a recipe you can go with.Very simple,plain and tasty too....


Also refer baby care space for more vegetarian infant recipes.


When introducing for the first time just boil the mutton pieces with turmeric powder, curry leaves and feed the soup. Then gradually increase the below ingredients.




Mutton Soup




Ingredients :

Mutton bones -4 pieces
Tomato -1/4 piece
Shallot -2
Garlic -2
Curry leaves -few
Turmeric powder -a pinch
Pepper -3
Toor dal -1 tsp
Jeera/cumin seeds -2 pinches
Salt as required






Method :


  1. When you buy mutton wash them clean and collect the bone pieces.


2. Add all the above ingredients with 2 glass of water and boil.
3. Close the lid and cook for about 15 minutes in medium flame.
4. Now filter out the soup leaving the mutton pieces.







5. This can be mixed with idlis,smashed rice and feed the baby. Avoid the mutton pieces when feeding the babies below 15 months,as they do not know to chew properly.

Note :


  • Avoid the pepper and garlic when introducing the soup initially.
  • Gradually start adding each ingredient one by one. 
  • Salt can be added a pinch for infants above 1 year.
  • you can also add a tsp of  the paste when grinding for Mutton kuzhambu. which gives thickness for the soup. I generally do this in my soups.
