Chicken Lollipop | Restaurant style chicken lollipop



Chicken Lollipop


When it comes for chicken I prefer chilli chicken and kebab and chicken lollipop is my all time favorite when I step in restaurants. Being a non vegetarian dining out for a vegetarian food will never be my choice. Some restaurant have a fried variety of lollipops and few places they serve with combined taste of both spice and tangy. Here is the recipe of similar version.


Ingredients :

Chicken - 250 gms (lollipop pieces)
Buttermilk - 1/2 cup
Salt - 1/4 tsp
Oil for deep fry

To marinate :
Red chilli powder -1 tsp
Turmeric powder - 1/4 tsp
Pepper powder - 1/4 tsp
Ginger garlic paste - 1 tsp
Corn flour - 1 tbsp
Salt - 1 tsp

To Saute :
Red chilli powder - 1 tsp (soaked in water to form paste)
Ginger - 1/4 inch
Garlic- 3 pods
Oil - 1 tsp


Method:



1. Wash the chicken pieces






2. Soak in butter milk for about 1 hour






 3. Remove and drain out water completely



 4. Add Red chilli powder, turmeric powder, Pepper powder and salt.

 5. Mix well and add corn flour

 6. Rub evenly and set aside for about 15 minutes
7. Heat oil in a pan and deep fry the marinated pieces
 8. Drain out in tissue paper




 9. Meanwhile make a paste of red chilli powder, finely chop onion, garlic and ginger.
 
 10. Heat a tsp of oil and add ginger and garlic chopped.
11. Saute for half a minute and add onions



12.  When onion turn slight pink add the red chilli powder paste.
13.  Fry until raw smell leaves off in low flame. You can also add a tsp of tomato sauce in this stage if you wish.





 14. Add about 3 tbsp of water to get gravy consistency. Sprinkle some salt too.


 15. Now add in fried lollipop pieces.
 16. Toss well and serve hot.







Note:

  • Soaking in buttermilk makes the chicken to be tender.
  • The tossing of fried pieces with fried onion will give a fine sweetness and spice to the recipe.
  • Serve with onion and lemon

Pepper Chicken (Semi Gravy) | Spicy Pepper chicken gravy



Pepper Chicken Gravy

 Pepper Chicken will be an inviting recipe of chicken for those who stick on chicken most of the times in cooking non-veg. This is very simple recipe which doesn't require much effort and grinding process other than pepper and spice powders along with added salt to taste.



Ingredients:

Chicken - 1/2 Kg
Onion - 1 sliced
Green chill - 1 
Curry leaves - few
Cinnamon Powder - 2 pinches
Ginger Garlic paste - 1 tbsp
Spice Powders (turmeric, Chilli, Coriander, Pepper) - As required
Salt - 1 tbsp
Lemon juice - from 1/2 lemon
Coriander leaves to garnish



Method :




 1. Heat oil a pan, add cinnamon powder, onions, slit chill, curry leaves and fry well.




 2. After about 2 minutes add ginger garlic paste and fry well.


 3. Fry until raw smell leaves off.


 4. Add in chicken pieces.





5. Cover with laid and cook for about 5 minutes in low flame.


 6. Meanwhile dry roast pepper corns and grind to a fine powder. (else you can use readymade powder too)




 7. Now add in all the spice powders.
 8. Along with chill powder and salt
9. Cover and cook for 5 minutes. 
 10. The chicken tends to leave out water and sprinkle about 1/ glass of water too for chicken to get cooked.





11. Use half lemon for juice.






 12. Add in chopped coriander leaves and lemon juice.
 13. Give a fine stir and put off the flame.  If you would like a gravy consistency add additional spice powders and water
14. Else the pepper chicken would be in semi gravy form as seen in the picture.






Note:

  • This can be served as starter along with rice and roti.
  • Do not cook after adding lemon juice.
  • Adjust spice powders according to your requirement. I used more of pepper instead other spice powders.

Tandoori Chicken Fry | Onion fried chicken | Tawa fried chicked




 This recipe is so simple and an awaiting recipe I wanted to try after years... During my college days I had couple of friends from Kerala,where I spend my time with them to learn Malayalam. Once I went to their room as usual and to my luck I got this simple recipe. They were not having any spice powders in hand other than salt and chilli powder.With the request of a friend they started marinating, slicing onion and frying a long time this recipe and it doesn't spoil up expectation. Its a perfect simple fried chicken on tawa. This recipe can be categorized as Tandoori.



Ingredients : 

Chicken - 250 gms
Red chilli powder - 1 tsp
Salt - 1/2 tsp
Oil - 1 tsp


 Method :


 1. Clean, wash and drain out the water completely. Add red chilli powder and salt.
 2. Allow it to marinate for 1 hour.
 3. Cut the onions into thin slices.
4. Heat oil in a pan, add the sliced onions and fry well.
 5. Cover with a lid and fry in medium flame.
6. Fry until golden brown. It takes about 15-20 minutes for the onion to get fry.
 7. Add in marinated chicken.
 8. Mix well, cover with lid and place the fried onions over the pieces and allow it to cook.
 9. After about 20 minutes the chicken and onions gets blended together and will be fried as shown in the picture.



 10. Transfer to a serving plate and enjoy the platter with onion and lemon.

Note : 
  • Cover with lid and fry both the chicken and onion.
  • Give a fine stir in between and let it cook in medium flame. Its a perfect and simple starter on kadai.
  • Serving with onion and lemon would be a better choice. Its quite a simple recipes for bachelors.

Chicken Popcorn


Crispy Chicken Popcorn


Chicken Popcorn is one of the recipe where the chicken lovers would never have missed the opportunity to taste these crispy bites. AM a very big fan of KFC but after my kid I generally don't prefer eating outside that too mainly non-veg foods. I feel its better to serve the home made foods rather than the carry outs. So here is my try out for chicken popcorn which turned out really good.



Ingredients:

Chicken fillets - 250 gms
Egg - 1
Milk -1/4 cup
Bread crumbs - 1 cup
Maida/All purpose flour - 1/2 cup
Onion Powder - 2 tbsp
Garlic powder - 1.5 tbsp
Red chilli powder - 2 tsp
Baking soda - 1 pinch
Black pepper powder - 1 tsp
Sugar - 1/2 tsp
Salt - 1 tsp
Oil for deep frying



Method :


 1. Clean the chicken fillets, wash and drain out water completely.
2. Cut them into fine cubes.




3. In a bowl mix Red chilli powder,pepper powder, salt, sugar,onion & garlic powder, baking soda and mix well evenly


4.In a separate bowl add milk and egg. whisk well.
5. Set in all your ingredients ready.





 6. First roll the chicken pieces in flour mix.
7. Next dip in egg mix.





 8. Finally roll in the bread crumbs.
9. Repeat the process by rolling the chicken pieces i flour mixture, egg mixture and breadcrumbs and set ready



 10. Heat oil a pan and add the chicken balls in batches.
 11. Do not add too much of balls at a time. Keep the flame in medium and fry the chicken pieces until golden brown.
 12. Drain out the fried balls in a separate pan.
13. Place it on a tissue paper and serve with any dipping of your choice.








Note:
  • You can use white pepper powder instead black pepper.
  • If you find paprika powder use instead of red chilli powder. This gives the chicken balls a vibrant color.
  • I love with mayonnaise, you can even taste with tomato ketchup's. 
  • If the chicken pieces are harder, soak them in buttermilk for about 4-5 hours to get it softer. 
  • You can also sprinkle little salt in the bread crumbs if you wish. I just added a pinch after one batch of frying the popcorn.
